Roasted Pineapple Pie with Tamarind Caramel

Maybe we desperate for warmer weather or maybe we just really wanted another fruit pie when there's nothing else available. Either way, we have a unique and delicious treat for you. Each pie has 2 whole pineapples that have been cut and roasted. Tossed in rum, cinnamon, and more pineapple juice, we then top it with a brown sugar cinnamon streusel. The piece de resistance, tamarind caramel. It's a little sour but oh so addictive. I throw that stuff on everything now but it particularly works with this special limited time only flavor.
