Meyer Lemon Lattice
Whole lemons, in a pie?! Yeah, we did that. This recipe is an ode to my first time having meyer lemons. I was working at an Italian restaurant in Brooklyn and we would make Gina DePalma's "All the Meyer Lemon Tart" on occasion (and with some modifications). There's something so magical about meyer lemons. They're sweeter but still tart. Bitter, yet palatable. So for this pie, we take thinly sliced meyer lemons and make a soft, rich custard spiked with limoncello. There might be a few seeds in there, so watch out! We're not perfect and those little guys are tricky. I got the idea for a lattice top from another Brooklyn pie shop, Pie Corps in Greenpoint. We used to share a kitchen space with the original owners over 10 years ago and I stumbled across their cookbook last year. Thanks for coming with me on that trip down memory lane.
